No-bake vegan peanut butter cookies

Aching sweet tooth? Relief comes in the form of this no-bake vegan peanut butter cookies recipe! Add in some chocolate chips or chocolate protein powder for your chocolate fix. Keep in the fridge for a week or the freezer for up to 3 months.

Prep Time: 20 Minutes
Servings: 12 large cookies


  • 1/2 cup Canned Coconut Milk
  • 1/4 cup Coconut Oil
  • 1 cup Granulated Sugar
  • 1 cup Light Brown Sugar
  • 1/2 teaspoon Salt
  • 2 teaspoons Vanilla
  • 1 cup Peanut Butter
  • 3 cups Oats


In a medium saucepan, add coconut milk, coconut oil, granulated sugar, light brown sugar and salt. Bring to a rolling boil and let boil for 1 minute. Remove from heat and stir in vanilla and peanut butter.

Pour sugar mixture over oats and stir until combined.

Scoop out into 12 large cookies (or 24 small) and let set 30-60 minutes. Serve!
