Summer is right around the corner! Kick it off with this Watermelon Mojitos Recipe.
Half fresh watermelon or about 5 cups, pureed
2 cups Bacardi rum
1/2 cup raspberry syrup
Juice and zest of 1 lemon
Juice and zest of 1 lime
1/2 tsp grated fresh ginger
1 cup fresh mint
Sugar to taste
Take a huge pitcher. Put in the watermelon pulp, raspberry syrup, citrus juice and zest, ginger and mint. Use a large wooden spoon to pulverize the mint on top of mix.
Add a little sugar and continue to mix. Add the rum.
Fill glasses with ice and serve.
