Stuffed Avocado Salad Recipe
Makes: 4 servings

· 2/3 cup crumbled feta cheese
· 2 small ripe tomatoes, chopped
· ½ red onion, chopped
· ½ cup cucumber, sliced
· 2 tablespoons chopped fresh parsley
· 2 tablespoons olive oil
· 1 tablespoon red wine vinegar
· 1 teaspoon oregano
· 2 large avocados, halved and pitted
· ¼ cup pomegranate seeds
Mix all ingredients, except avocados, in a small bowl. Season with salt and pepper to taste. Spoon into each avocado half and top with pomegranate seeds to serve.
