Simple Homemade Crepes

Makes: 10-12 crepes

Total Time: 25 minutes

· 3 large eggs

· 1 cup all-purpose flour

· 1 cup milk

· ½ cup water

· 2 teaspoons sugar

· 1 teaspoon vanilla

· ¼ teaspoon salt

· 3 tablespoons butter, melted

· Whipped cream, for serving

· Sliced fruit, for serving

· Honey, for drizzling

Add eggs, flour, milk, water, sugar, vanilla, salt and butter to a blender, and blend on low until combined.

Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using a scant ¼ cup for each crepe. Tilt the pan in a circular motion so that it coats the surface of the pan thinly and evenly.

Cook for about 2 minutes, until the bottom has light brown spots, Loosen with a spatula (or fingers if you’re careful!), flip and cook the other side.

Serve hot with fresh whipped cream, sliced fruit and a drizzle of honey.
