Simple Shrimp Scampi Recipe
Makes: 4 servings
Total Time: 25 minutes
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1lb. medium shrimp, peeled and deveined
3 cloves garlic, minced
¼ cup white wine (or chicken broth)
¼ teaspoon crushed red pepper flakes
freshly ground black pepper
3 tablespoons fresh parsley, minced
¼ cup freshly squeezed lemon juice
zest of 1 lemon
¼ cup freshly grated parmesan
8 ounces cooked linguine OR 1 loaf crusty bread
Melt the butter and olive oil in a large skillet over medium high heat. Add garlic and sauté until fragrant, about 1 minute.
Add wine, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
Add shrimp and sauté until they just turn pink, 2-4 minutes depending on size. Stir in the parsley, lemon juice and lemon zest. Top with parmesan.
If serving with linguine, add pasta and toss to coat. If serving with bread, grab your loaf and start dipping!
