This One Pot Chicken Magic Recipe is a quick weeknight dinner for you and your family to enjoy without a lot of fuss.
4 boneless, skinless chicken breasts ( or whatever parts your family enjoys)
1/2 red pepper
1/2 green pepper
1/2 yellow or orange pepper
1 medium onion
8 oz. mushrooms ( any kind or mix you prefer)(or omit)
1tsp. minced garlic
1tsp. sesame oil
1/4 cup season salt
2 tbsp. garlic powder
2tbsp. herb seasoning
1 tbsp. salt
Black pepper to taste
1 cup chopped parsley
1 cup sugar snap peas ( or any green vegetable of your choice)
6oz. cream of celery soup
6 oz cream of mushroom soup
6oz. cream of chicken soup
2 cups chicken stock or broth
2 cups 10 minute brown rice
You will need a large, deep, flat bottom pan.
Chop all vegetables into small pieces. Put aside.
Season chicken with all seasonings listed. (Except black pepper) cut up into bite size pieces.
Add in sesame oil. On medium to high heat
When oil heats up add in onions only. Sauté until opaque.
Add in minced garlic.
After one minute add seasoned chicken and brown the outsides
Add rice into pan (all around chicken)
Add in all soups (all over and around chicken)
Also add in chicken broth or stock
Mix all ingredients together and then place lid on top.
While on med to high heat let cook for 10 minutes
Remove lid stir all contents together. Make sure chicken is cooked through ( not pink in the middle)
Taste rice to make sure it too is cooked.
Add in all veggies and mushrooms
Recover with lid for 2 minutes
Ready to serve.
