Leftover Turkey Panini Recipe

We know, we know – it seems just a bit early to be planning recipes for leftovers! But can you blame us? Everyone has their own take on eating leftovers, but we must say, this leftover turkey panini recipe is one for the books! And the best part? You can add pretty much any of your leftovers to the sandwich and we are pretty sure it will be delicious! Want to get wild and add mashed potatoes? We support it!

Leftover Turkey Panini Recipe

Makes: 2 sandwiches

Total Time: 20 minutes

Ingredients:

4 slices sturdy bread of your choice

2 tablespoons butter

¾ pound leftover turkey

¼ cup leftover cranberry sauce

2 tablespoons mayo

6 slices cooked bacon

sliced red onion

2 ounces goat cheese

2 slices Muenster cheese

Directions:

Heat a skillet or panini press to medium high heat.

In a small bowl mix mayo and cranberry sauce together. Place the bread slices on a plate and spread with cranberry mixture on one side of each piece of bread. Layer bread slices with turkey, bacon, onion, goat cheese and Muenster.

Melt butter in the hot skillet or panini press. Add sandwiches and gently press down to melt everything together. When the outside is golden brown and the cheese is melted, remove from heat and enjoy!
