Homemade Granola Recipe

This homemade granola recipe is a great fall go-to for a dinner or holiday party because each guest gets their own personal dessert. Add a scoop of vanilla or butter pecan ice cream and it will be a hit for sure! If you have left over baked apples, heat in the microwave and eat for breakfast the next morning! The homemade granola recipe can be doubled and used all month long or given out as gifts. Munch on that!

Homemade Granola Recipe

Serves 4-6

INGREDIENTS:
Granola
3 Cups of Old-fashioned Oats
1 Tsp. Pumpkin Spice Seasoning
1/4 Tsp sea salt
1 Tsp. Cinnamon
1 Cup of Pumpkin Seeds
3 Cups chopped nuts ( We used chopped
pecans, hazelnuts & almonds)
3/4 Cup of Maple Syrup
1 Tbs of vegetable, canola or coconut oil
Garnish with: Cinnamon, honey, cinnamon sticks or cloves

Baked Apples
4 baking apples -1 per person (Gala, Fuji, Pink Lady)
1/2 stick of butter
1/ cup of brown sugar
3/4 of cup of hot water (can add apple cider or brandy)
3/4 tsp. of cinnamon; sprinkle of salt

DIRECTIONS:

Set the oven to 350 degrees. wash and dry the apples- core or scoop out the inside of the apples, but keeping the bottom intact so filling won’t leak out. Place the hollowed apples in a casserole dish. (Don’t use a glass pan)

Combine the brown sugar and 3/4 tsp of cinnamon in a bowl. Fill each apple with about 1 tbs. of sugar/ cinnamon combo. After filling, top each apple with a quarter sized butter slice. Pour in the hot water to the apple dish. You’ll want about an inch of water. Set aside.

In a large bowl or pot combine the granola dry ingredients (oats, nuts, spices) with your hands until well blended. In another bowl, whisk together wet ingredients (maple syrup, olive oil, vanilla extract). Pour the liquid bowl into the dry ingredient bowl and stir to combine until evenly covered.

Spoon granola onto a greased baking sheet into an even layer. (We added another sprinkle of cinnamon here)

Place the casserole dish with apples and the baking sheet with granola into the oven. The apples will cook for 45- 1 hour depending on how big your apples are (cook until soft not mush, they will be a bit wrinkly). The granola will cook for about 30 minutes (make sure to rotate the pan after 15 minutes and occasionally stir with spatula). Check frequently so not to burn.

Remove from oven once either dish is done to cool off (Stir the granola while cooling so does not form into a block). Plate the apples and spoon the liquid from the casserole dish over the apples. Fill the apple’s opening with the granola and top with your favorite vanilla ice cream or whipped cream (if serving for dessert). Enjoy!
