Grilled Street Corn Recipe

This grilled street corn recipe is one of our summer staples! It’s a crowd pleaser and an absolute flavor bomb. Bursting with bright citrus and smoky grilled fresh corn, this is a summer recipe you don’t want to miss. We recommend serving alongside grilled fish tacos or your favorite carnitas recipe. Don’t forget to serve with extra lime wedges for squeezing!

Grilled Street Corn Recipe

Makes: 4-6 servings

Total Time: 20 minutes


· 6 ears fresh corn on the cob, husked

· Vegetable oil

· 3 tablespoons lime juice

· 3 tablespoons sour cream

· 2 tablespoons mayonnaise

· ½ teaspoon chili powder

· ½ teaspoon smoked paprika

· ½ teaspoon cumin

· Dash cayenne pepper

· Salt and pepper to taste

· ¼ cup crumbled cotija

· ¼ cup chopped fresh cilantro


Preheat the grill to high heat. Brush corn with vegetable oil then grill, turning every 2-3 minutes, until slightly charred on all sides. Cool and then cut kernels off the cob into a medium bowl.

To the bowl, add lime juice, sour cream, mayonnaise, chili powder, smoked paprika, cumin, cayenne, cotija and cilantro. Stir then add salt and pepper to taste. Garnish with additional cilantro.
