So many yummy things in one grilled chicken sandwich recipe! This simply seasoned grilled chicken sandwich recipe is packing all the right flavors and textures. As a sandwich, it’s very customizable but two things we recommend not missing: the grilled bun and pickles! They’re must haves for this sandwich!
Grilled Chicken Sandwich Recipe
Total Time: 20 minutes
4 small (1 – 1 ½ lbs) boneless, skinless chicken breasts
salt and pepper
4 slices provolone cheese
1 avocado, sliced
8 slices bacon, fried crispy
½ red onion, sliced
¼ cup mayo
2 tablespoons Dijon mustard
4 brioche rolls, sliced in half
Pound the chicken breasts to ¼ inch thick. Season on both sides with garlic salt and pepper.
Preheat grill over medium-high heat and spray with nonstick spray. Place the chicken on the grill and cook on the first side for 3 minutes with the lid down, flip and grill for an additional minute. Add a slice of cheese on top of each piece of chicken, then close the lid and grill for 2 minutes, or until the chicken is cooked through. Remove to a plate and let rest 2-3 minutes.
Mix together the mayo and mustard and spread on each side of the bread. Place cut side down on the grill and toast.
To assemble, layer the chicken, avocado, bacon, onion and pickles on the roll. Serve and enjoy
