If these fudgy monster brownies aren’t the scariest (aka cutest!) brownies you’ve ever seen! They feature a decadent ganache frosting to hold the candy and googly eyes in place. Because we all know when it comes to Halloween, all you have to do is add googly eyes for an instant on-theme treat!
Fudgy Halloween Brownies
Makes: 16 servings
Total Time: 45 minutes
• 10 tablespoons butter
• 1 ¼ cups sugar
• 3/4 cup cocoa powder
• ¼ teaspoon salt
• 1 teaspoon vanilla extract
• 2 large eggs
• ¼ teaspoon baking powder
• ½ teaspoon espresso powder (optional)
• ½ cup all-purpose flour
• 2/3 cup semi-sweet chocolate chips
• 4 ounces bittersweet chocolate, roughly chopped
• 4 tablespoons heavy cream
• 2 tablespoons unsalted butter, cut into cubes

Preheat the oven to 325°F. Grease an 8×8” baking dish.
Add 1-2 inches of water to a medium saucepan. Heat water until barely simmering then place a medium bowl on top that doesn’t touch the water. Add butter, sugar, cocoa powder and salt to the bowl.
Stir mixture occasionally until the butter has melted and the mixture is warm. It may look quite gritty at this point. Remove from the heat and let cool for 5 minutes.
In a small bowl, combine the baking powder, espresso powder and flour.
Stir vanilla into the butter/sugar mixture with a spatula. Then add eggs, one at a time, stirring vigorously after each one.
Once the batter looks thick and shiny, and the flour mixture and stir until fully incorporated.
Beat vigorously for a minute or two until the batter pulls away from the sides of the bowl.
Bake for 20-25 minutes until a toothpick inserted in the center comes out almost clean. Cool completely.
While the brownies are cooling, make the ganache – Place chocolate in a heatproof bowl and set aside.
Place cream and butter in a heavy saucepan. Bring to a low boil over medium-high heat.
Remove from heat once a low boil is achieved and pour over chocolate. Let sit for 5 minutes then stir until smooth.
Pour ganache over cooled brownies and spread. Before ganache hardens, push in candy eyes, candy, sprinkles, pretzels, etc.
Cut into 16 squares and enjoy!
