Crispy Sweet Potato Fries Recipe

This crispy sweet potato fries recipe is a surefire way to change up the way you eat vegetables. Break out of that salad rut! Fries don’t always mean fried! Oven bake or use an air fryer to transform vegetables into crispy strips, wedges or chips. Make our fry sauce or a healthy ranch with plain Greek yogurt, dill and lemon juice for a delicious dip. With the right seasoning you won’t be able to stop eating your veggies!

Crispy Sweet Potato Fries Recipe

Prep Time: 20-30 Minutes
Servings: 2-4

INGREDIENTS
Sweet Potato Fries:
2 Sweet Potatoes
2 tablespoons Olive Oil
1/4 cup Parmesan Cheese, finely grated
1/2 teaspoon Salt, or to taste
1/2 teaspoon Red Chile Flakes
Fresh Parsley to garnish, optional

Alternative Veggies to Use for Fries:
Standard/Heirloom Carrots
Zucchinis
Green Beans
Kale (cook at a lower temp around 300f)
Parsnip
Butternut Squash
Portobello Mushrooms

Fry Sauce:
1/2 cup Mayonnaise
1/4 cup Ketchup
2 tablespoons Sugar
1 tablespoon Red Wine Vinegar
3/4 teaspoon Worcestershire Sauce
1/4 teaspoon Salt
1/4 teaspoon Onion Powder
1/8 teaspoon Ground Mustard
Powder
Pinch of Paprika

DIRECTIONS
Prepare the potatoes: slice sweet potatoes into slices about 1/4-inch thick, leaving skins on. Soak wedges in water for 15 minutes. Drain and pat dry with paper towels or a lint-free towel.

In a large bowl, toss sweet potato slices with olive oil, Parmesan cheese, salt and red Chile flakes.

Cook Fries in the Air Fryer: place wedges in the Air Fryer basket or drawer in a single layer so that none are overlapping. Cook at 375F for 10-15 minutes until fries are golden and crisp.

Remove from Air Fryer and sprinkle with fresh parsley. Repeat with remaining sweet potato wedges. Serve with ketchup or fry sauce, recipe below.

Make the Fry Sauce:
Mix everything together and refrigerate, covered, for 30 minutes for flavors to meld. Store in the fridge until ready
to use.
