Chicken Power Bowl Recipe with Avocado Dressing

The best part about “bowl” foods? They are made to be customized and therefore are perfect for using up an abundance of produce or leftovers in your refrigerator. So adjust ingredients as needed! They are also perfect for making ahead and taking as a weekday lunch. Just remember to keep your dressing on the side! Enjoy our take with this chicken power bowl recipe.

Chicken Power Bowl 

Makes: 4 servings

Total Time: 30 minutes

Ingredients:

2 cups cooked quinoa

2 tablespoons extra-virgin olive oil

1-2 large avocados, sliced

2 cups chickpeas, drained

2 cups tomatoes, sliced

2 cups cucumbers, sliced

2 cups yellow peppers, sliced

1 cup red onion, sliced

1 cup radishes, sliced

1 cup feta cheese, crumbled

1 cup sunflower seeds

4 large handfuls salad greens

fresh herbs

4 grilled chicken breasts, sliced

 

Directions:

Drizzle the quinoa with olive oil then divide all ingredients among four bowls.

Feel free to substitute veggies, cheese, nuts and protein where needed and wanted!

Toss with dressing and enjoy!

Avocado Dressing

Ingredients:

1 large avocado

1/4 cup olive oil

1/4 cup water

1/4 cup parsley

1 tablespoon tahini

2 cloves garlic

juice of 1/2 lemon

1 teaspoon honey

salt and pepper to taste

 

Directions:

Combine all ingredients, except for olive oil, in a food processor or blender.

Pulse until smooth and then slowly stream in oil until combined.
