We’re sure that the crumb and apple topping with a drizzle of caramel will make you wonder if you’re still dreaming!
Caramel Apple Coffee Cake
Makes: 12 servings
Total Time: 1 hour
• 3 cups all-purpose flour
• 1 cup sugar
• 3 teaspoons baking powder
• 1 teaspoon salt
• 8 tablespoons butter, at room temperature
• 2 large eggs, at room temperature
• 1 cup milk, at room temperature
• 2 teaspoons vanilla extract
• ½ cup all-purpose flour
• ¾ cup light brown sugar, packed
• 1 ½ teaspoons cinnamon
• ¼ teaspoon salt
• ¼ cup butter, melted
• 2-3 medium apples, cored and sliced thinly
• ½ cup caramel sauce for drizzle
Preheat the oven to 325°F. Grease an 9” round baking dish.
In a bowl, combine flour, sugar, baking powder and salt. Set aside.
In the bowl of your stand mixer, beat 8 tablespoons butter, eggs, milk and vanilla until combined. Slowly stir in flour mixture, mixing until well incorporated.
Pour batter into baking dish.
To make the topping, combine the flour, melted butter, brown sugar, cinnamon and salt. Mix until combined and little pea-sized pieces form.
Cover batter with sliced apples.
Sprinkle topping over apples and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven, cool and then drizzle with caramel before serving.
