Ceasar Salad is one of those staples at the house when we are having dinner. One of my go to options is this Caesar Salad with Parmesan Croutons Recipe. Try it out and let me know what you think in the comments.
1 Egg yolk
3 tbsp fresh lemon juice
1 tbsp minced garlic
½ tsp Worcestershire sauce
¼ tsp red pepper flakes
1 tbsp Dijon mustard
2 anchovy fillets, mashed
¾ c vegetable oil
1/3 c extra‐virgin olive oil
Salt and freshly ground pepper
1 large head romaine lettuce, cleaned and cut into 1 to 2‐inch pieces
Freshly grated Parmesan cheese
2 c croutons (recipe follows)
In a medium bowl, whisk together the egg yolk, lemon juice, garlic, Worcestershire, pepper flakes, mustard and anchovies. Slowly whisk in the oils to emulsify. Season, to taste, with salt and pepper.
Place the lettuce in a large bowl. Sprinkle with Parmesan and black pepper.
Drizzle with desired amount of dressing and toss well. Sprinkle top with croutons.
Baguette, cut into 1‐inch cubes
Shredded parmesan cheese
Allow the baguette cubes to sit out overnight, uncovered. Melt the butter, and add the parmesan cheese, basil, oregano, white pepper, and some freshly ground black pepper and a pinch of kosher salt.
Drop the bread cubes in the mixture and toss. Place on a large baking sheet and broil in the oven until toasty. Place on paper towels and allow the croutons to rest.
Sprinkle more parmesan cheese over the croutons and let sit out for about an hour.
