BBQ Slaw Dog Recipe
Makes: 16 servings
Total Time: 10 hours 30 minutes
For the pork-
· 1 (3-4lb.) bone-in pork butt
· Kosher salt and fresh ground pepper
· 1-2 cans dark soda
For the slaw-
· 2/3 cup mayo
· 1 ½ tablespoons apple cider vinegar
· 1 teaspoon poppyseeds
· 3 tablespoons sugar
· ¼ teaspoon salt
· 1/8 teaspoon fresh ground pepper
· 1 14oz bag shredded cabbage
For the toppings-
· Barbecue sauce
· 16 beef hot dogs
· 16 hot dog buns
Season the pork generously with salt and pepper. Place in a slow cooker and pour soda until it reaches up half of the pork. Cook on low for 8-10 hours.
Meanwhile, make the coleslaw. In a large bowl, combine the mayo, apple cider vinegar, poppyseeds, sugar, salt and pepper. Add the cabbage to the mayo mixture and stir to coat. Refrigerate until ready to eat, ideally several hours before serving.
To assemble, remove pork butt from slow cooker and shred with two forks. Toss with desired amount of barbecue sauce. Place hot dogs in buns then top with pulled pork, coleslaw, a few pickles and another drizzle of barbecue sauce.
